banana loaf

I thought I'd share the recipe I make the most often: banana loaf. It takes less than 10 minutes to prepare, and is a great way to use up those super ripe bananas. Breakfast will never taste this good.

Yield: 1 cake

1 yogurt or 1.5 cups milk
1/2 cup vegetable oil
3 large, very ripe bananas
3 eggs
3 cups flour
1 cup sugar
1 tsp. baking powder
pinch of salt
a few drops of vanilla extract
chocolate chips or cocoa powder (optional)

In a large bowl, mix the flour, sugar, salt and baking powder.

In a smaller bowl, beat the eggs into an omelet, then add the yogurt, vanilla extract, oil and mix.

Incorporate the small-bowl mixture into the large bowl mixture.

Add the sliced bananas and, if you so desire, the chocolate!

Grease a cake pan and pour the mixture. Bake for 40 minutes, or until a knife comes out clean.
